Kale comes in many varieties and colors.  We grow Lacinato kale (also called dinosaur kale), red Russian kale, and green curly kale.  The Lacinato kale has the best flavor, while the others have interesting color and texture.  The stems of the red Russian and curly kale are tough, so they should be removed from the leaves before eating.  Kale is usually cooked, but can also be used in salads if leaves are small or coarsely chopped.
