Garlic is wonderful both raw and cooked.  The first garlic of the season is green garlic and garlic scapes.  Green garlic is uncured garlic, picked small or large.  It can be used like garlic cloves – the stems can be used also if they snap cleanly (which indicates they are not stringy).  Garlic scapes are the flowering heads of “stiffneck” garlic (softneck garlic has soft stems that can be braided).  The scapes can be chopped and used like garlic cloves.
