Beets

We grow beets in a variety of colors – Red, Red/white Striped, and gold. All of them can be used interchangeably. Beets are great baked and roasted. Just cut off the tops, brush with some cooking oil, and bake/roast at 350 degrees until tender (about 1 hour for larger beets). Beets can also be cooked, chopped, and added to salads. See the beet recipes for other ideas. Note that when you use the bathroom after eating beets, everything comes out red.
The greens of younger beets are also delicious and can be cooked as greens.
